Yep. Still gaining on the re-feed after the fast. Hmmmm.
***TL;DR*** Cold potatoes and rice don't spike insulin and feed gut bacteria***
So, I've been getting new info coming up on my radar about the importance of healthy gut bacteria. You know how sometimes, when you're ready for the next step, the Universe will bombard you with what you need to know? First, it's just a casual mention. Then it's 3 articles in 3 different newsletters in one day, all on the same topic. I learned a long time ago to pay attention to these synchronicities.
I had been marginally aware that gut flora have to be kept in balance for overall health, especially when taking antibiotics. But I wasn't aware how much it affected other things like immune function, allergies, vitamin production, etc. I was floored when I learned that there is more bacterial DNA in my body than human!
It's all well and good to add probiotics like L. acidophilus, but those are just repopulating the intestinal flora. They need to be fed, too, and for those of us on LCHF, that becomes a challenge, because the very things we avoid are what feeds them.
So then I learned there are different types of resistant starches that feed those bacteria. It seems that cooking potatoes and rice, then immediately cooling them retrogrades the starch, rendering it indigestible in the stomach and small intestine, so it ends up as perfect food not only for the bacteria we rely on, but is the preferred fuel for the cells that line the walls of the intestine. It's converted into short chain fatty acids, such as Butyrate, which is anti-inflammatory. And in the retrograded state, will not spike insulin or blood glucose. In fact, it also has been shown to enhance insulin sensitivity.
All that being said, it looks like sushi and potato salad are back on the menu! Um, theoretically. LOL
I treated myself to sushi yesterday, so we'll see how the gut responds.

Hang in there, sometimes it takes the body a few days to process the change in your diet. I take a probiotic and thought it would help to, however your information has really helped me understand more about maybe why I'm not seeing a big difference after using them.

boy that all seems very complicated. with my weak brain; i would think that a refeed after a fast whould be something that a body builder would do to bulk up after cutting body fat .

@Redhead, it might also be the reason so many on LCHF have 'potty problems'. Especially if the gut bacteria weren't thriving before starting.

@Kathleen, these bodies ARE complicated, and everything is interconnected. I think we've just begun to scratch the surface of the nutrition/metabolism questions. A "re-feed" after a fast is nothing more than starting to eat again..LOL A carb load for body building is a whole different critter.

Perhaps "synchronicity" = fad? Gut health is important. Getting proper fiber is vital to keeping the little buggies in your GI happy and pumping out butyric acid and other SCFAs. Though there is a small kernel of truth to this fad, cooling taters does virtually nothing to make them resistant to digestion. Tubers typically contain c. 0.5-1.5% amylase-resistant starch. Multiple rounds of heating and cooling can increase that to as much as 2.5%. (See, e.g., Yadav et al., Int J Food Sci Nutr. 2009;60 Suppl 4:258-72 at http://www.ncbi.nlm.nih.gov/pubmed/19562607.) That still leaves 97.5% of the starch as simple, digestible carbs. If you're really trying to keep your net carbs low yet get plenty of fiber, you're probably best served eating a high-fiber protein bar or taking a fiber supplement (e.g., Metamucil). Protein bars like Quest or Mission1 bars typically contain a lot (>10g) of good fiber (SCF or IMOS). I'd limit intake of inulin (aka chicory root) fiber to <8g/day as it has "limited digestive tolerance." Eating two Fiber One bars, for example, will make most people rather uncomfortable.

TIP to remember from the guru here. After a fast, you will gain EXACTLY THE SAME AMMOUNT of WEIGHT that you put in your body. lol. It isn't turning in to fat. its literally weight that you are adding via the food. So don't fret. its not your body weight, its the weight of the food. And learning what I am learning about potato and resistant starch may have just broadened my 1 meal a day horizons. I SO miss potato's.

FWIW, i make my own greek yogurt at home, use organic whole milk, sometimes add organic heavy cream to the top and i only eat 1-2 tablespoons a day on top of blueberries or i make tzakziki. yes, there are some carbs, but minimal the way i make it, and it keeps my insides happy. the consequences if i don't are harsh and can be complicated, but include medically diagnosed IBS and diverticulitis, so it's worth it for me.

I had diverticulitis 6 weeks ago, took antibiotics, killed all good gut flora. Severe pain, back to dr where I was told about the killing of good gut flora, thanks alot for the heads up doc! Started taking a pre and pro biotic and also drink kefir. Has helped immensely.

I'm stunned because you weigh more today than when you started the fast. It boggles my mind. I know I stopped losing on the 36:12 cycle I was on. I am mystified how a 90 hour fast could net a gain.

A little kefir, saurkraut, kombucha and yogurt keeps the gut populated with the good guys.

Good information provided by all. I will share with my hubby as he does lchf. Me I have found cico working for me. Yes, I watch out not to eat too many carbs but I love fruit, potatoes, and noodles as a special treat on occasion.

I'm working on repopulating my gut after the strong antibiotics I took for the pneumonia. Using probiotic formula, fermented foods and acacia bean powder for a probiotic - high fiber. Who knows? I guess it's working.

Yikes, TMI😁 YOU just do what works for you! I have read so much info over the years on diet etc that changes all the time it's too much for me since I know it changes too much. I'll keep reading your posts! IF I learn anything more I'll pass it on too. So much hype and sales pitches out there beware,
