Well, there it is. Bread. Kes cannot eat white bread. I keep testing, and it keeps telling me the same thing. Dammitall!
So, yesterday was frustrating. I found a Japanese recipe that looked really good, using Shiratake noodles. I happened to have all the ingredients at hand, (doesn't everyone keep dashi powder and sake in their pantry? LOL), so I made it. It was.....horrible. The only thing I changed in the recipe was to use stevia in place of the sugar it called for. Now, granted, I've never had the original, so I don't know what it's *supposed* to taste like, but what I ended up with was inedible. But, having tasted it, my 1 hour eating window was open, and I was hungry, dang it! So I made myself a chili-cheese dog. With a bun. And it was good. *sigh*. I ended the day under 1000 kcal, and still jumped more than a pound in weight. I know, water, inflammation, etc. But I so want to get over this wheat sensitivity!
It is 89F here right now! Hello Summer! But it's just a brief glimpse, because in 2 days, it's expected to be back down in the 60's.
ANYway.....I'll probably test again in a couple of months. In the meantime, the search goes on for a reasonable substitute.

Haven't you tried Draglist's almond bread, Kes? It really solves the craving for bread with hardly any carbs (no flour) and you can make it in two minutes! I love it.

@Doobs, no, I haven't. I looked for his recipes a couple of months ago when they were mentioned, and couldn't find them!

Here is Bill's recipe: 4 tbsp almond flour, 1/2 tsp baking powder, 1 tbsp olive oil, 1 egg. Stir up dry ingredients in a microwave bowl, then stir in the olive oil and egg and mix well. Microwave for 90 seconds. Done! A smaller bowl will make a narrower, higher result that you can cut horizontally to use for a sandwich or top as a muffin. A wider bowl will make a shorter 'pancake' that accepts butter and syrup very nicely! STATS: cals: 338kcal | fat: 31.47g | carbs: 6.38g | prot: 11.65g

Or try the 1 minute keto muffin http://www.ditchthecarbs.com/2017/01/25/1-minute-keto-muffins/ but it's better with flavours such as cheese rather than plain x

I've tried them Phooka but, to be honest, I'm not a big fan of coconut flour 😕

Bread is one of my Achilles Heels, too, give if I give in a little I always end up giving in a lot.

Whenever I change my diet to revolve around a new region (like Japan), I buy a cookbook and make a list of all the new-to-me ingredients and then hit the market. Where I live, there are pockets of Mexican, Vietnamese, Turkish, Indian immigrants and Iraqi refugees, all of whom have opened specialty grocery stores stocking foods that sometimes aren't even in English. This is fun for me, because I always drop pounds when I change my diet up. P.S. Dashi powder is a soup base. Feel free to substitute chicken or veggie stock.

Maybe it's the yeast and dough conditioners, etc. that are in most bread. I find I don't notice much when I eat wheat that is not raised with yeast, such as muffins.

Here's my plan: lose the weight, 1 year tops, buy myself a SKG Automatic Bread Machine that makes gluten free bread. Then I can make my own bread that's way better then the packaged stuff and it won't make my insulin go crazy. :-)
