Could be - I never did claim to be the shiniest penny in the roll. I do recall thinking 'wow, that's a lot of capers...' but I wasn't going to judge. Lentils makes more sense at that quantity. Onward!

Our usual weekday salad now that it's warmer is any combination of spinach, rocket, lettuce, tomato, cucumber, 15g of feta, some cooked lentils and for this one we had the red cabbage, but were out of grated carrot. I often just use grated beetroot salad as my dressing, but this one has some red pepper humus mixed with lemon juice and a bit of water to make it runnier as a dressing and the falafel is homemade by hubby from a slightly adapted recipe on https://www.delish.com/cooking/recipe-ideas/recipes/a54231/easy-homemade-falafel-recipe/ - he uses 1/4 of a normal white onion instead of the shallots and we coat ours in seasoned flour before shallow frying. We make about 3 batches at a time so there's only one blender cleanup and then freeze the rest. We used to have boiled eggs and fish fingers in our salads, but since going vegetarian about a year ago we're trying to find veggie sources of protein to use instead so sometimes I'll add red kidney beans or chickpeas instead of the lentils too. This one has a ton of lentils cos I wanted to finish them off since they were cooked on Monday and might start going bad soon. :)

Wow that looks great!! Perhaps something that I will try for a Christmas salad instead of greek salad or potato salad.
