Diario de erikahollister, 16 jul. 16

Anybody had any experience baking with erythritol? I was thinking about trying some keto brownies, and I ran across this no calorie ingredient. Any knowledge would be helpful. Thanks.

OK I did a little research and found this very helpful article about low carb sweeteners: http://www.ruled.me/keto-diet-plan-best-and-worst-sweeteners/ It's very informative, so I thought others might be interested. :) Have a sweet and non-fattening day!

Sounds good! Thank you for sharing. I recently found a natural coconut palm sugar which is 4g per teaspoon. I've used Agave in cooking before but although natural as well, it has 16g per teaspoon. Able to have a brownie!? Yumm! Thank you!

So, I'm not sure how to log the erythritol. It is listed as having 4g/tsp of carbs, but the literature says that it isn't metabolized, and has a O gycemic index and no insulin affect. If it actually counts as carbs, then I blew my carb count today, but if it doesn't then the cakey brownies I baked were just no carb food (eggs, almond flour, unsweetened cocoa, vanilla, gelatin and xanthan gum). Maybe I'll be able to tell on the scale tomorrow? It didn't feel like an insulin spike or leave me bingey/cravey.

I should probably just skip the keto treats and stick to the simplest eating. Meat, fermented dairy and veggies. But once in a while a human wants a little something........
